What is your favorite coffee?
C: A feeling of comfort embraces me when I have the Ethiopian coffee. Its floral aroma and shimmering citrus tone always prompt my desire to explore this unique yet varied flavor at different coffee shops.
What makes good coffee?
C: Good coffee is not necessarily delicious and it refers to high quality coffee beans which are freshly roasted and properly brewed.
Any useful tips for brewing bespoke coffee?
C: You have to be clear with what coffee you want because each type of coffee requires a different brewing method. To find out your bespoke coffee, try to explore as many boutique coffee shops as possible because it is important to have a reference point to compare and contrast the coffees. If you don’t know what to start with, ask yourself: Do I like milky coffee? Any preference on special tone like citrusy? Do I enjoy the unique taste of hand brewed coffee?
Any recommendations for special coffee pairings?
C: Our restaurant has recently created a series of fascinating coffee recipes to complement the theme of international signature dishes. Coffee is used as soup, sauce, jelly, marinade, foam and Chinese dessert. For example, coffee has replaced the lime in the Tom Yum soup and seafood paella is paired with Ethiopian coffee to bring out the aroma while spicy iced coffee is paired with vegetarian Italian soup to create a meaty taste. I wish to reinvent coffee’s image with all these astonishing recipes to drive more people to explore coffee in an innovative way.
